I'm not sure about your first question but to remove the yellow or warmer undertones you could tone your hair or get your hairdresser to, or you can buy a purple shampoo (I find ones with a blue undertone apposed to a plain pink/purple undertone to be better cause it removes orange and yellow tones) to use once or twice a week.

It's definitely possible but it may be a tad patchy but you could always go back in and bleach a little more.
As for the brassiness I would use a toner or this one protein filler from Sally's. It's a purple thing and looks kinda blue the color is called "platinum" and I just put it in my hair and it works as a sort of treatment as well cause my hair always feels better after using it. I personally don't like using purple shampoo cause I like using sulfate free shampoos, most purple shampoos have sulfate and it just dries out my hair.
Get purple if it's yellow. Purple/blue if it's more golden and blue if your hair is orange. If you go too blue your hair will be green.
