Is your hair naturally thick and coarse? If so, highlighting it can make it horribly unmanageable! A friend of mine has ridiculous thick hair, and she bleached it once, and it was a complete nightmare for her.
Unfortunately, I don't really have many other tips other than what you're currently doing. My hair is really long and straight, but I still use like heaps of conditioner every time I wash my hair to keep it smooth and manageable.

Your hair was processed to long or had the wrong product on it. As far as therapy, I recommend going to a stylish and getting the Paul Mitchell Awapuhi Keratriplex treatment. It generally cost more than most but it has great results. It can bring your hair back from the deadest of the dead. I have used it on clients and on myself. This is a wonderful treatment. Also if your hair is dry rather than normal you want to give yourself a 5 min scalp massage every shampoo to help regulate your sebacious glands. Another tip I have for you is to leave the conditioner in for about 5-10 while you do the rest of your showering. When you use a treatment, leave it in for 15-20 min and put a shower cap on with a towel on top of that for heat. This will help make the most of your products. next time you get highlights, ask your stylist if they have a cream lightener. This will help prevent the problem in the future. Let me know the results!

It could be a combination of sensitivity and improper use. I would suggest not going back to that stylist.
