My hair is really dry, thin, easily weighed down, & slightly wavy-curly. My problem is that I need to add volume & thickness, define my waves, and add a lot of moisture without weighing it down..

If you REALLY want to add volume and thickness... CUT it. You may not be interested in cutting it but it does add a lot of volume.. You can ask for layers to be put in also. For everyday volume, tease your roots really well, curl your hair tight, brush thru the curls with your FINGERS not a brush, then flip your head upside down hairspray it , flip it back over and then just tame and spray the BIG bunch of hair you'll have after doing that.

Try pro naturals argan oil products, they're oil but super light and don't weigh down on your hair when you style it.

I have very thin yet coarse hair, and ever since I started using the products (shampoo and conditioner) from John Masters Organics my hair seems more full of life and easier to manage. I don't know if that helps at all, but I would recommend those products to anyone.
