I've dyed my hair a few times over the week going from blonde to brown. This last time it turned almost all this grey/blue. Is my hair rejecting the dye?

Thats happened to me. My hair now rejects black hair dye. Unsure of the reason why either.

This happens when you hair is over process or when you are trying to go more than 2 shades darker. You need to fill it. You need to add color back so the brown gas something to adhere to. It can get complicated if you try at home and don't know what your doing. I suggest to go to a professional. Hope this helps.
