Keys to Success with Salmon!
-high heat on a non-stick pan
-little bit of vegetable/canola oil (NO OLIVE OIL, Olive oil has a higher acidity= burning/ rancid oil, it isn't meant for high temperature cooking)
-wait to add the Salmon, make sure the pan is hot!
-skin side down first, don't move it!!
-2-4 minutes depending on thickness on first side, look for the outer edges changing color
-1 minute on the other side
-Pull Salmon off, let sit for a second
-Perfectly cooked salmon should have a slight bounce! Over cooked salmon= hard and dry
