This is my version of Chicken Marsala. I will be telling you the measurements of everything throughout the video.
Ingredients: 1/4 c. flour, 1/2 tsp. salt, 1/4 tsp. pepper, 1/2 tsp. dried oregano, 4 skinless, boneless chicken breast halves - pounded 1/4 in. thick, 4 tbs. butter, 4 tbs. olive oil, 1 cup sliced mushrooms, 1/2 c. Marsala cooking wine, 1/4 c. cooking sherry.
Directions: In shallow bowl or dish, mix together flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. In large skillet, melt butter in olive oil over medium heat. Place chicken in pan and lightly brown. Turn over chicken pieces, add mushrooms. Pour in Marsala cooking wine, cover skillet, turning chicken once till all chicken juices run clear. Cook your pasta in separate pot and drain when done. Remove chicken and mushrooms from large frying pan and put in serving platter. Cover with tin foil to keep warm. Put drained pasta into the juices left in large frying pan and toss and cover for a few minutes on low-med heat till sauce is absorbed into pasta. Sprinkle dried or fresh parsley over pasta if desired. Serve on individual serving plates with pasta on the bottom, then top with the chicken and mushrooms. Then sit down and enjoy!!!!
