I feel so honored to be included and to share one of my favorite, versatile recipes that omnis love just as much as vegans! Its all about the spices and the texture of the great northern beans that gives these sausages such a satisfying flavor without the animal cruelty! These sausages work great in pasta, soups, or just on their own with vegan mushroom gravy.

This recipe is inspired by Isa Chandra's recipe from Post Punk Kitchen. I modified it and made it a bit more spicy and packed full of flavor, but her recipe introduced me to the methods of preparation for vegan sausages. Check out her original recipe here:

*NOTE: I've heard you can sub cheese cloth for aluminum foil if that is a concern, but they don't firm up as well or taste as good according to others who've made them that way. Its up to you. You can reuse aluminum foil too if you want to conserve resources.

Vegan Italian Sausage Recipe:
1 1/4 cups Vital Wheat Gluten
1/2 cup Great Northern Beans
1 cup vegetable broth
1/4 cup nutritional yeast
1 TB Tomato Paste
1 TB EVOO
2 TB Tamari or Soy Sauce
1 tsp dried basil
1/2 tsp thyme
1 tsp garlic powder
1/2 tsp paprika
2 teaspoons fennel powder
1 teaspoon liquid smoke
crushed red pepper flakes (to taste)
ground pepper (to taste)
