This tutorial happened because I was obsessed with making this fish meal for a while. I will list the recipe and the roasted vegetable recipe I mention in the intro below. Fish is not for everyone I understand a lot of people don't like it but I'll make more dinner videos as I get other obsessions.
Roasted Vegetables (not shown but mentioned in intro):
350 degree oven
bake time about an hour
casserole dish (pyrex) lined with aluminum foil
Carrots - peeled and cut into pieces big enough to not be mushy but small enough to cook all the way
Yams - peeled diced into bit sized pieces these take the longest so make these small
Yellow Onion - cut these into bigger pieces basically 1/4 the onion then spread out
Red Potato - wash the skin leave it on cut into same sized pieces as yams
Cloves of garlic - whole cloves of garlic or you can half them
Fresh Rosmary - one stick is usually enough break stick up spread out over vegetables
Salt + Pepper to taste
Spice - I usually sprinkle a little dry oregano and dry parsley but you don't have to
Olive Oil lightly drizzled over everything then bake uncovered in oven for about an hour to an hour and a half. If you spread the vegetables out to a single non-overlapped layer it cooks fasted. You know it's done with your yams and potatoes are soft in middle and the onion has caramelized.
Fish:
350 degree oven
Bake 30 minutes
You can use cod or haddock both are very similar about 1.5 pounds is plenty for 2 people
If you can't find the coconut mixture in the seafood department for free you can make it pretty easy. Mix dry shredded coconut (in baking section) with PLAIN bread crumbs. You want 80% bread crumbs and 20% of the mix to be coconut or else it comes out too sweet.
You need the dry mix to stick to the fish so you can add egg to the fish like I did or you can lightly coat with a bit of olive oil, veg. oil, pam, whatever. To cut down on the sogginess of the bottom of the fish that happens while it cooks you can flour the egg before adding the coconut mix or you can use the oil method but make sure it's light coating. Or you can bake the fish on a screen inside the pyrex so it's not sitting in drippings of the fish that happens as it cooks.
When done the fish should break apart easy and the topping should be golden brown. Don't over cook 30 minutes is plenty for 1.5 pounds.
Asparagus:
Steam for 3-4 minutes or until your crispness preferences is reached
Add minced garlic sauted in butter or olive oil for flavor or eat plain.
Salt to taste
Salad:
I just bought a package of mixed greens, cut up a green pepper and added shredded cheese and shredded parm. Do whatever you want.
