My brother made these for thanksgiving and they were sooo good! So when I was browsing for things to make sushi I saw a box of mussels and decided to make them.
RECIPE:
12-15 frozen mussels. You could probably do more but I put way too much mayo on them.
1 cup of mayonnaise (Japanese if you prefer)
1 tblspoon of sriracha (or to taste)
1 tblspoon of smelt (capelin) roe
DIRECTIONS:
Preheat a toaster oven to 350-450º. A toaster oven is optimal since it is small but supposedly you can use an oven as well.
Thaw frozen mussels. Separate mussels from shell. Clean shell if necessary. Cut into three pieces and place back into shell.
Add mayonnaise, sriracha, and smelt roe into a bowl. gently mix together to avoid smashing the eggs. Spoon mixture onto mussels. Spoon extra roe for garnish.
Arrange mussels onto aluminum foil onto the toaster oven rack. Be sure to fold the edges upward to avoid leaking from the mussels. Place on bake for approximately 7-10 minutes. Since the mussels are precooked they will just heat in the oven. Place on broil for addition 5 minutes to brown the top.
Should be served immediately.
