This is my own recipe! I hope you enjoy a change from the vegan staple, spaghetti with marinara. This is sweet, salty, and tangy...a healthy and affordable vegan meal, perfect for a weeknight. It comes together in less than 45 minutes!
Ingredients:
1 (1 lb box) tri-color rotini)
2 TB extra virgin olive oil (1 TB for sautéing, 1 for the noodles)
1, 28 oz can crushed tomatoes
1/2 tsp oregano
1 TB italian seasoning
1 tsp garlic powder (you can sub in 2 cloves minced garlic)
1/2 cup chopped kalamata olives
1 1/2 TB capers (more or less, depending on taste)
1/2 cup chopped walnuts
1/2 cup golden raisins
3/4 cup chopped flat leaf parsley
1 lg. red onion chopped
salt/pepper to taste
crushed red peppers to taste (optional)
