It's Mavie in the kitchen! Look out! Incidentally, I filmed this video on the 12th Night, which is the beginning of Mardi Gras and this dish is one that comes from New Orleans, so that worked out perfectly!

Ingredients:
1 tbs olive oil or canola oil
1-2 cups diced turkey kielbasa
1 bell pepper, seeded and diced
2 garlic cloves, minced up (tip: use a separate cutting board so as not to contaminate the board for other foods)
8 oz boneless, skinless chicken breast, cut into cubes (about a 1")
1 1/3 cup long grain rice
2 1/4 cup low-sodium chicken stock (+ either 1/2 cup water if you don't want all the sodium or 1/2 cup extra chicken stock)
1 can plain diced tomatoes
1 tbsp tomato paste
cayenne pepper to taste
2 bay leaves
salt and pepper to taste
optional: 8oz shirmp peeled & deveined (tip: the smallest shrimp are always the best because they are more flavorful and most likely are not given growth hormones)
