This meal is kinda a hybrid of things i like, great too if you want to leave out the meat and stir a substitute 'meat' in with the veg, or even just veg on its own!
Obviously u can save some time and just stir fry plain chicken pieces in with the veg til its cooked. Chinese food can be healthier and usually take under 5 mins to make, but more for preparation, so if you have the prep done at the weekend just thrown the veg into the pan frozen:) great for busy students!
DISCLAIMER: this is not a diet meal or completely healthy meal but much more healthy, & tasty then a takeaway version, which is full of grease and leaves you feeling bloated! Hope you try it!
Ingredients:
-1 small chicken breast (half would almost be enough but i want leftovers)
-breadcrumbs optional(can throw chicken straight into the pan without if your in a rush)
-veg of your choice(mine was carrots, broccoli & water chesnuts but traditionally you could use bell pepper & pineapple for added sweetness)
- 1 mounted teaspoon of cornflour
- 2 tablespoons of Rice wine vinegar NOT NORMAL VINEGAR
- 2 tablespoons of ketchup
- 2 tablespoons of pineapple juice/ water chesnut juice (add a little xtra sugar to chesnuts)
- 2 tablespoons of sugar
cook nuggets at 22o degrees celcius for 10 mins , turn over and cook for another 8-10 mins
