I get up pretty early in the mornings and sometimes I don't always feel like eating but I still need something to keep me going until lunch time. This smoothie is just the thing to fill me up, wake me up and give me energy.
1 young Thai coconut -- milk and flesh
1 large frozen banana (or equivalent)
1 handful of blueberries (fresh if you can)
2-3 strawberries
You can get these coconuts from Woollies or fruit and vege shops in Australia for around $3.00, I'm not sure where you can get them in other countries but if they're easy to get here then they are probably really common everywhere else :D and they do need to be kept in the fridge.
Be sure to get someone to help you open the coconut if you need to because they can be a little bit tricky
The reason I use coconut milk is because it's really really yummy and it won't make you feel too heavy after drinking it, oh and it's full of goodness too :D
I prefer frozen bananas instead of unfrozen because of the texture, the unfrozen ones taste a little slimy when they are blended to me.
If it's summer or warm where you live you can always add some ice cubes in the blender (delicious in summer) just make sure your blender can handle ice though.
Some other nice fruits you could use with the banana and coconut are mango, kiwi fruit, paw paw, rockmelon and you could even add some baby spinach leaves for something a bit different.
If it's just for you and you find there's too much smoothie to drink, try making some ice blocks with the leftovers!!
