1 Cup regular or cubed sugar
2 Two tablespoons cold salted or unsalted butter
3 One cup heavy cream
4 Enough water to make "Wet Sand" in your pan
Optional
Salt if you want an umami (savory) taste leave out though if your butter already has salt.
Honey, Corn Syrup, or lemon juice to make the caramel stay creamy and not recrystalize.
Important tools: Use a saucepan that is not aluminum or that is at least thick, wisk, ice in a bowl (ice bath), and patience!
This is a series I always meant to do with my talented brother but never got to because of our busy lives. Now mine is not so busy and so it works! My brother, Nathan but people call him Buddy, is a trained NECI pastry chef. He makes all kinds of wonderful things for the huge resort he works for in Stowe. I am very proud of him and his accomplishments.
Like me, he likes to teach people how to do things he is passionate about and so in this first cooking tutorial he chose how to make the elusive homemade caramel sauce. So many things can go wrong if you have no idea how to make this seemly simple dessert additive. I personally attempted and failed 3 times in one night following "the best" videos I could find on step by step howtos on YouTube. Funny how all 3 videos had completely different recipes and instructions.
The main thing my novice eyes picked up was that the key thing to doing this successfully is to NOT stir it at any point until you add the cream and do NOT touch the heat. He basically left it the same the entire time. This whole process takes about 20 minutes if you do it right but is sooooo worth it this is amazing caramel.
