Oh god I kinda made it up as I was going along. The whole idea was that I wanted it to be slightly healthier than a full on meat and spaghetti sauce lasagna. We're trying to eat healthier even though I used to lovvvvve a good regular lasagna. This was the first time I made this, and I have to say it wasn't bad. It was actually a bit more flavorful the second day. It tasted more like garlic. You can take out whatever you want or use a different brand, level of fatness for ingredient I don't mind. If you do try it and alter it let me know what you did and if it was good!
On to the Recipe Already!
Prep Time: About 40 minutes
Preheat Oven: 350 degrees
Cook Time: ~40 minutes covered with aluminum foil then ~20 minutes to brown the top
Lasagna Noodles: Cook according to package but usually about 10-13 minutes
Broccoli Steam Time: 4 minutes
Summer Squash Steam Time: 8 minutes for medium sliced thickness
Kale Steam Time: 2 minutes
Other Ingredients:
1 small container greek style feta cheese
4-6 lasagna noodles (you can use the healthier multi-grain noodles but i think it tastes like cardboard and it's too expensive)
4 or 5 small handfuls of part skim mozzarella cheese
Vegetable Layer Ingredients:
3 broccoli crowns
3 small yellow summer squash
4 big leaves of fresh kale
Ms. Dash garlic & herb spice
Parmesan cheese to taste (I put probably 1/2 cup maybe less?)
a bit of salt
3 huge cloves of garlic
1 tablespoon butter
Enough extra virgin olive oil to coat frying pan thinly
Cheese Filling Ingredients:
2 cage free eggs beaten
1 small container part skim ricotta cheese
1/4 cup grated Parmesan cheese
Rest of the bag of the other Parmesan cheese
Ms Dash garlic & herb spice
Cajun spice
Tools You May Want:
Steamer
Deep pot to steam in
Cutting board and sharp knife
Strainer
Casserole dish
A few glass bowls
Pot holders
