Pumpkin muffin recipe:
found from the Pinterest Cooking Classy however I changed up some of her ingredients like vegetable oil, I used coconut oil to make it more healthy and to suite my diet! I also shortened the recipe (I didn't have everything haha). They came out AMAZING and will be making them again tonight (that's how much we loved them)
1 1/2 cups of flour (I used organic)
1/2 tsp baking soda
3/4 tsp sea salt (she used regular but sea salt makes it more delicious and healthy)
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/4 granulated sugar (I used organic)
1/2 cup coconut oil
1 cup of canned pumpkin (I didn't measure I used the whole can)
2 eggs
1/4 cup apple juice
Preheat to 350
1. mix the first 5 ingredients in 1 large bowl
2. mix the rest in a smaller bowl
3. combine into the large bowl and mix with a rubber cake spatula
4. pour into muffin trays
5. bake for 20-25 min
