MUSHROOM RAGÙ GNOCCHI (Serves 2)
INGREDIENTS:
1 tbsp Mr Organic Extra Virgin Olive Oil (Gift): http://bit.ly/2U4v83b
1 white onion
3 cloves garlic
2 tsp dried herbs
1 tsp paprika
1 bay leaf
1 tbsp Mr Organic Organic Italian Tomato Puree (Gift): http://bit.ly/2MEABN6
300g minced mushrooms
1/2 bottle Mr Organic Italian Organic Passata With Fresh Basil (Gift): http://bit.ly/2MFEJfX

Small bunch fresh parsley, torn

Fresh basil to garnish
Pour the Mr Organic Extra Virgin Olive Oil into a medium sized pan on a low-medium heat. Finely chop the white onion, add it into the pan then mince the garlic and allow to cook until soft. Next add in the dried mixed herbs, paprika and bay leaf, then add in the Mr Organic Organic Italian Tomato Puree, turn that through well and continue to cook it off for a few more minutes. Finely mince the mushrooms, add those to the pan and stir it through well, then continue to cook it down until the mushrooms have softened. Once the mushrooms have cooked, pour in the Mr Organic Italian Organic Passata With Fresh Basil, and add in the vegan Worcester sauce and fresh parsley, then season well with salt and black pepper. Give the sauce a good stir through, increase the heat to bring it up to a gentle boil then leave it on a simmer for around 30 minutes to reduce down until it becomes more of a Ragù. Add the Mr Organic Italian Organic Gnocchi into a separate large pan of boiling water, then leave it to boil for two minutes until the gnocchi begins to rise to the surface of the pan. Drain the gnocchi off through a colander, then add it back into the empty pan. To that, add the Mushroom Ragù and carefully turn the sauce through the gnocchi until it’s well combined and has heated all the way through again. Serve hot with fresh basil to garnish.
