My quick & easy Spaghetti & Stuffed Meatballs recipe. All the ingredients are below, just follow along to see how I build it. Good family style meal I think you'll really enjoy! Thanks for watching xoxo!
Ingredients for the sauce:
2 12 oz. cans of no salt added tomato sauce
2 6 0z. cans of tomato paste
2 table spoons of fresh minced garlic
2/3 diced yellow onion
2/3 diced green pepper
1 diced whole large tomato
2 tablespoons of dried oregano
2 tablespoons of dried basil
pinch of salt and pepper to taste
Ingredients for the meatballs:
1 lb. lean ground beef
1/2 lb. ground turkey
1/3 diced yellow onion
1/3 diced green pepper
1/4 cup of italian bread crumbs
1 tablespoon garlic powder
1 tablespoon dried oregano
pinch of salt and pepper to taste
1/4 cup of cubed fresh mozzarella cheese
For the sauce cook the tomato sauce & paste add a medium heat until the paste breaks down. Add the veggies & spices and bring to a boil for two minutes covered. Stir it well then let it cook it on the lowest heat for twenty minutes and prep your meatballs.
For the meatballs mix all the ingredients except for the cheese. Make sure the meat is nice and blended and easy to mold. Take small amounts in your hand, flatten, place a cheese cube in the center and then mold the meatball around it.
Warm a large skillet with cooking spray and a tablespoon of vegetable oil. Cook the meatballs on a medium high heat for 6-8 minutes. Checking them and ensuring that they are browning evenly (you will need to turn them), then place them in your sauce (don't pour them in, you don't want excess grease or oil in your sauce).
Cook your pasta of choice, add your meatballs and sauce, sprinkle some fresh parmesan and parsley and enjoy!
