This is absolutely one of my FAVORITE savory vegan dishes I've made to date -- it's total comfort food so it's perfect for the holidays too!

Ingredients--
1 vegan pie shell
Filling part 1-
canola or vegetable oil
1/4 cup onion chopped
1 cup fresh broccoli, chopped
1/3 cup fresh bell pepper, chopped
1/3 cup vegan cheese
sea salt and pepper
Filling part 2-
1 (14-19 ounce) block of firm tofu, drained and sliced or cubed
4-5 tbsp nutritional yeast
1-5 tbsp soy milk or soy creamer (I used 1 tbsp)
1 tbsp + 1 tsp unbleached flower
lemon juice or lemon powder
1/2 tsp turmeric
2/3 tsp sea salt
Topping-
sliced green shallots
2 tsp vegan butter (I used organic earth balance buttery spread)
Recipe--
Thaw pie crust for 10 minutes, poke base with a few holes using a fork to prevent the center rising, then bake for 10 minutes at 400 degrees F. (Though if package directions are different, refer to those instead.) Set aside after baking.
In a skillet pan, heat oil over low heat. Add in onions and saute until translucent for about three minutes. Add in broccoli, sauteing for 2 minutes. Then add in red bell pepper and saute for 3 more minutes. Remove from heat and set aside.
Preheat oven to 350 degrees F.
In a blender or food processor combine lime juice, flower, turmeric, sea salt, nutritional yeast, soy milk and tofu. (Blending in a blender may need more soy milk or soy creamer than when using a food processor.) Once a paste is made from mixture, transfer to a bowl and add in veggies. Mix together, then add in vegan cheese, pepper, and salt. Mix together.
Pour filling into chilled pie shell, smoothing over the top. Bake for 45 minutes at 350 degrees F. Once baked, remove from heat and cool for at least 20 minutes. While cooling, saute some shallots in vegan butter to add to top of quiche for adornment and flavor. Serve warm or cool and enjoy!
