#MEALPREPMONDAYS | RECIPES
BREAKFAST - Spinach and Mushroom Egg Frittata w/ Turkey Sausage Links
- 6-8 eggs scrambled
- Place on baking sheet with parchment paper
- Add roughly chopped mushrooms and spinach
- Bake at 350 for 10-15 minutes
LUNCH - Shredded Buffalo Chicken with Celery Sticks
- Place 3 large chicken breasts in slow cooker with buffalo chicken slow cooker sauce
- Cook on HIGH for 4 hours
- Use fork to shred chicken at 3.5 hours
- Chop celery stalks and make a side of ranch dressing

DINNER - Zucchini Noodle Pasta w/ Vodka Sauce
- Create noodles with large zucchini and spiralizer
- Finely chop mushrooms and onions and saute in olive oil
- Add vodka sauce
- Quickly saute zucchini noodles in hot pan (warm them up)
- Add sauce and mozzarella cheese on noodles

BREAKFAST - Spam Katsu
- Cut low sodium spam
- Create dredging station with 1 egg and mix of panko (Japanese bread crumbs) and furikake (Rice Seasoning)
-Fry in hot oil about 1 minute each side
- Serve on rice with eggs (optional: top w/ unagi sauce)
