SWEET POTATO & PECAN CASSEROLE:
Sweet Potato Mixture
— Two 29-oz cans of cut sweet potatoes
— 1/2 cup butter, melted
— 1/3 cup evaporated milk
— 3/4 cup light brown sugar
— 1 tsp. vanilla extract
— 2 eggs, beaten
Pecan Topping Mixture
— 2 cups light brown sugar
— 1 cup all-purpose flour
— 1 tsp. cinnamon
— 1/2 tsp. nutmeg
— 1/2 tsp. salt
— 2/3 cup butter, melted
— 2 cups chopped pecans
Directions:
1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.
2. Sweet Potato Mixture: In a large bowl, mix together sweet potatoes, 1/2 cup melted butter, evaporated milk, 3/4 cup light brown sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish.
3. Pecan Topping Mixture: In a small bowl, mix 2 cups light brown sugar, flour, cinnamon, nutmeg, and salt. Add pecans, then melted butter. Mix until well combined with a crumbly texture. Sprinkle pecan mixture over the sweet potatoes.
4. Bake for 25 minutes in preheated oven, or until golden brown.
5. EAT UNTIL YOU CAN’T EAT NO MORE!!!!
