Mediterranean rice (a.k.a Tabbouleh salad): Mix bulgur rice (soak in boiling water for 1 hr, let it cool or put in fridge then take out when ready to serve), cucumber slices, onion leeks, cherry tomatoes, cilantro, parsley (optional mint leaves), 1 tbsp olive oil, dash of pepper and cumin powder (eyeball measurement), himalayan pink salt to taste.
Roast potatoes (sweet or regular): sliced potatoes mixed with 1/3 cup safflower or EVVO, 1/3 cup nutritional yeast, 1 tsp each dried oregano, basil, thyme, dash of pepper and himalayan pink salt (optional curry or cumin powder). Bake 350 degrees 1 hour covered with alum foil. Once done, roast 5 mins low-setting in oven.
