Skinny Banana Bread Recipe I use:

3 ripe bananas, medium-large
1 egg
1 Tbsp. vanilla extract
1tsp cinnamon
2 Tbsp. brown sugar substitute ( you can use SUKRIN GOLD , SPLENDA BROWN SUGAR BLEND , or LAKANTO GOLDEN SWEETENER)
3 Tbsp. Stevia or any sugar substitute
1 tsp. baking soda
1 tsp. baking powder
1 1/4 cup self rising flour ( I use Gold Medal )
2 Tbsp. Land o’ lakes made with canola oil light butter melted
Preheat oven to 350 degrees and spray BREAD PAN (9×5 or 8×4)or a 12 muffin tin with non stick cooking spray
In a medium bowl add bananas and use a fork to mash well.
Add egg, vanilla, brown sugar and stevia or sugar substitute . Stir well.
In a separate bowl combine flour, baking soda & powder.
Add dry ingredients into the wet slowly as you stir. Before the two are incorporated add in melted butter. Stir just until barely combined.
DO NOT OVER MIX. The number one tip is to not over mix.
Pour into pan and bake for 30-45 minutes or until an inserted knife or toothpick comes out clean.
(I cut into 8 slices and count 3 pts per slice. You could cut into 12 slices and count 2 pts per slice)
Enchilada Casserole Recipe
(This meal preps for 7 days)
-3 lbs of Lean Ground Beef
-1 29oz Hunts Tomato Sauce
-1 29 oz Red Enchilada Sauce
-2 cans Rotel Tomatoes
-1 can Black Beans
-1 can corn
-1 jalapeño
-1 red onion (chopped)
-2 packages of low sodium Taco Seasoning
Toppings:
-1-2 Tablespoons Plain Greek Yogurt
-drizzle Taco Bell Mild Taco Sauce
-1/4 Avocado
-1/4 cup Kraft Fat Free Cheddar Cheese
Directions:
Brown the meat, add Taco seasoning packets. In a skillet, mix corn, jalapeño & red onion with a drop of olive oil. Sauté that until brown and add that to the meat mixture all in a big pot. Add in all the cans of things and let it simmer. I usually serve up 2 cups at a time or maybe a cup and 1/2 into a dish and top with greek yogurt, taco sauce, cheese and Avocado on the day of.
