Crock Pot Broccoli Cheese Soup
1/2 cup butter
2 cloves minced garlic
24 ounces evaporated milk
5 cups diced broccoli
12 ounces shredded cheddar cheese
2 ounces Parmesan cheese
1 1/2 cups diced onion
6 Tablespoons flour
5 cups chicken broth
1/2 cup heavy cream
1.) Add chicken stock and diced broccoli into Crock Pot.
2.) Melt butter in a large pan. Add onions and saute for 3-4 minutes, until onions begin to soften.
3.) Add flour and mix to create a paste. Cook for 1 minute to remove raw flour flavor.
4.) Add in evaporated milk. Whisk together until mixture becomes smooth. Cook until mixture thickens.
5.) Add flour and milk mixture to Crock Pot. Stir to combine.
6.) Cook on high for 2 1/2 to 3 hours or on low for 6 hours.
7.) Turn off Crock Pot. Stir soup.
8.) Add in heavy cream and both cheeses.
9.) Mix to melt cheese. (This may take a few minutes of stirring for the cheese to fully melt and incorporate.)
