Chicken & Rice Soup
4-6 pieces of skin on bone in chicken
1/4 cup chicken soup base
1 small onion - diced
12 ounce frozen mixed vegetables
3/4 cup Minute Rice
water
Boil chicken for 1 hour in water (enough to cover the chicken without boiling over). After 1 hour, remove chicken and pick meat off bone. Dispose of skin and bones.
Return chicken to water and fix in chicken soup base. Stir to fully incorporate. Simmer for 1 hour.
Add in frozen vegetables and simmer for 15 minutes.
Add rice 15 minutes before serving. Turn off heat. Cover and let stand until rice is fully cooked (approximately 15 minutes).
*Soup does freeze and thaw well. I typically put it into sandwich bags once it has cooled and freeze it flat on a cookie sheet until fully frozen.*
