MONDAY - Avocado Sauerkraut Toast
Wholewheat seeded bread
Hummus
1/2 avocado, sliced

Coriander
Toast the bread, then once done, spread on a thick layer of hummus, add on some sauerkraut then add the sliced avocado on top. Finish with hemp seeds and fresh coriander.

TUESDAY - Baked Banana Oat Clusters
1 over-ripe banana
1 cup porridge oats
3 tbsp CM Coconut Honey (Gifted): https://amzn.to/2GTufXk*
Pinch salt
Almond yoghurt
Raspberries, strawberries, blueberries
Preheat the oven to 180 degrees celsius. Break up the over-ripe banana into a bowl, then mash it up using a potato masher. Add in the porridge oats, coconut honey alternative and a pinch of salt, then just mix that all through together well. Brush a baking dish with some coconut oil, then add in the banana-oat mixture, and using a spatula just break it up a little bit to make it form the little clusters. Place that in the oven to bake for around 15 minutes and just give it a bit of a shuffle half way through. Remove it from the oven after the 15 minutes and leave it to cool slightly. Serve with some almond milk yoghurt and fresh berries.
WEDNESDAY - Breakfast Scramble
Small handful button mushrooms, halved
1 tomato, chopped
Small handful spinach
Small handful kale
1/2 avocado, cubed
1/2 tsp onion granules
Pinch chilli flakes
Salt & pepper
Bread
Hummus
Add the mushrooms to a medium pan on medium heat with a little oil, then cook them off until they start to brown. Next add the tomato to the pan along with the spinach and kale, then just allow the tomatoes to cook slightly and for the spinach and kale to wilt and soften. After a few minutes, add in the onion granules, chilli flakes and season it with salt and pepper. Turn off the heat, add in the cubed avocado and then just turn it over gently a few times. Serve with a slice of wholewheat, seeded bread and hummus on the side.

THURSDAY - Hummus & Kale Toast
1 small handful kale, stems removed

Chilli flakes
Placed the kale in a bowl, then add in a drizzle of oil, lemon juice, nutrition yeast, onion granules and some salt and pepper, then using your hands just massage everything into the kale. Toast some wholewheat seeded bread and once done, spread on a thicker layer of hummus, add the kale on top, then sprinkle on some hemp seeds and chilli flakes.
