Small handful fresh basil

Add the couscous to a mixing bowl along with the tomatoes, cucumber, basil, olive oil, ACV, salt and pepper. Mix through well.

ROAST VEG LENTIL PASTA WITH PESTO
HOMEMADE BASIL PESTO:
1 cup basil
3 cloves garlic, peeled
Juice of 1/2 lemon

2/3 1 portion roast vegetables (pepper, aubergine, courgette, onion)
Small bunch fresh basil
Add the pasta to a mixing bowl along with 2 tbsp pesto. Mix well, then add in the roast vegetables and basil, and stir though again.
Olive tapenade hummus, crackers, blueberries, almonds
HUMMUS, PESTO & ROAST VEG BAGEL
1 bagel
Hummus
Pesto
1/3 portion of roast vegetables
Rocket
Halve the bagel, spread some hummus on one half and pesto on the other. Add on the roasted vegetables, rocket, press together and half again.

GUACAMOLE:

Small bunch fresh coriander
Juice 1/2 lime
Pinch chilli flakes
Salt & pepper
(red onion and/or garlic, optional)
2 slices crusty bread

Handful rocket
Spread the guacamole onto one slice of bread, add on the bean salad, some crushed tortilla chips and rocket. Press together and cut in half.
