Battling Lupus, the fact that they offer anti-inflammatory properties is reason enough to find a way to incorporate them into my lifestyle. The fiber supports better digestion and I promise, I keep heartburn, indigestion and acid reflux like they are my children! Anything that will aid in digestion without issues is something I will surely welcome. It also supports brain health, lupus comes with brain fog and that's really not fun.

I will be honest, one of the reasons I don't care for beets is because they taste quite earthy but I decided to sweeten them up by using some sweeter fruits and veggies. I cut up 3 apples and 2 carrots and I also added some honey. This really helped short-circuit the flavor of the beets. I was expecting the worst but was pleasantly surprised. If you try this recipe, please let me know. I'd love to know what you thought of it or if you found some other things to help enhance the flavor. Oh, I almost forgot, I add a pinch of turmeric, ginger with black pepper to pretty much every recipe I make. They too have anti-inflammatory properties.
