1 c. oil

1 c. oil
1 1/2 c. sugar
2-3 lemons - rind grated very finely
6 eggs
1 2/3 c. flour
2 tsp. baking soda
Preheat oven to 300.
*Use an electric mixer*
Add oil and sugar to a large bowl. Finely grate in the rind of 2 large or 3 small lemons.
Add eggs, mixing after each.
Sift in dry ingredients.
Mix until well combined. *It will look like cake batter*
Pour evenly into bread pans
*2 regular bread pans
OR
*4 mini loaf pans
Bake at 300 for 40-50 minutes.
Cool completely on wire racks.
Dust with powdered sugar.
*Does freeze well*
