BREAKFAST - Loaded Spinach Toast:
2 slices seeded bread
6 sun-dried tomatoes
1 tsp dried chilli flakes
1 tsp garlic granules
90g fresh spinach
Salt & pepper
Fresh chives
Toast the seeded bread and meanwhile, chop the sun-dried tomatoes then add them to a pan on a medium heat with the dried chilli flakes and garlic granules. Allow that to fry off for a few minutes before then adding in the spinach, leave it to wilt down before seasoning well with salt and black pepper. Serve the spinach mixture on top of the toasted bread and garnish with fresh chopped chives.
SNACK - Strawberry & Yoghurt Rice Cakes:
Rice cakes
Vegan yoghurt
Strawberries
Wash, hull and slice the strawberries, then spread the yoghurt on the rice cakes and add the strawberries on top.

Vegan vanilla yoghurt
1/2 mango
1 passionfruit
Simply cube the mango and add it on to the vanilla yoghurt, then squeeze over the passionfruit.
