YOGHURT FRUIT TOASTS
Bread for toasting

Fruit: blueberries, raspberries, strawberries
Spread the yoghurt on some small slices of toast and just simply add on your fruit of choice! Nuts, seeds, fresh mint and chia jam also work well as extra toppings.

Simply top the yoghurt with some berries and then break up the snack bar and crumble it over the top. Nuts, seeds, fresh mint and chia jam also work well as extra toppings.
CHICKPEA SALAD RICE CAKES

1 avocado
1/2 can chickpeas
1 large handful spinach
10 cherry tomatoes, quartered
Juice 1/2 lemon
Pinch chilli flakes
Salt & pepper
Dice the avocado up into cubes and add that to a bowl with the chickpeas, tear in the spinach, add in the cherry tomatoes, squeeze in the juice of half a lemon, add in the chilli flakes and salt and pepper. Mix it all together well and then add it on top of some rice cakes, or alternitvely this could be another topping for toast, in a sandwich or on a jacket potato.
ONE BOWL CHIP AND BLACK BEAN & CORN GUACAMOLE DIP
2 avocados
1/2 cup black beans
1/2 cup sweetcorn
1 small red onion
2 small tomatoes, chopped up
Fresh coriander
Juice 1 lime
Pinch chilli flakes
Salt & pepper

Mash up the avocados in their shells and scoop them out into a bowl, next add in the black beans, sweetcorn, red onion, tomatoes, fresh coriander, lime juice, chilli flakes and salt and pepper. Mix that all together well, then take your tortilla chips of your choice and just line them around the edge of the bowl one by one with the dip in the middle. This could also work as a sharing snack or as a side for a Mexican dish!
LOADED HUMMUS TOAST
Bread for toasting
1/3 cucumber
Handful cherry tomatoes
Handful green olives
Pinch chilli flakes
Salt & pepper
Chop up around 1/3 cucumber into cubes, cut up a handful of cherry tomatoes and dice up a handful of green olives. Toast some bread then spread on a generous layer of hummus, top it with the cucumber-tomato-olive mixture, sprinkle on some dried chilli flakes and season with salt and pepper.
