Vegan Goulash and Roasted Chick Pea Salad
Vegan Goulash
Recipe
1 box of Elbow pasta
1 Jar of your favorite pasta sauce
1-2 peppers - diced
1 medium size onion - chopped
1 tsp garlic powder
1 tsp Italian Seasoning
1 tsp black pepper
1/2 tsp dried basil
salt to taste
1/2 tsp paprika
Boil pasta to box direction.
Saute peppers and onions in coconut oil or any oil. When half way done add the whole bag of boca 'meat' crumbles, add seasoning. Cook till done ans add sauce. Cook till hot and add in pasta.
Roasted Chick Peas
Put drained Chick Peas in bowl. Save AquaFaba 9liquid from chick peas)water for other Recipes if you'd like. You can even freeze the liquid. It's a great Egg replacer.
Toss with your favorite Seasoning. I like Taco Seasoning. Lightly Oil baking sheet. Heat Oven to 400 F. Bake for about 20 minites turning them once in awhile. They won't be completely crunchy hard till you take them out and them cool a bit.
