BREAKFAST - Raspberry Jam & Almond Porridge:

1 cup oats
1 tbsp maple syrup: http://amzn.to/2aub6Nd

1 tbsp raspberry chia jam
Flaked almonds
Add the almond milk and oats into a small pan on a medium heat and stir until it cooks through. Next add in the maple syrup and almond butter, stir that through well and then I served, top with the flaked almonds and mix it all together again before eating.

SNACK - Snack Plate:

Olives, sun-dried tomatoes, pickled beetroot etc.
Serve the crackers with pickled beetroot, sun-dried tomatoes, olives etc. as a snack plate.
LUNCH - Cajun Bean Burger Salad:

1/2 lettuce
1 gherkin
1 tomato
1/2 avocado
Salt & black pepper
1/2 red onion
Mustard etc.
If cooking the burgers from frozen, preheat the oven to 180 degrees celsius, place on a lined baking shelf in the oven to cook for around 25 minutes. Shred the lettuce, then make the ‘Burger Salsa' by chopping up the gherkin, tomato and avocado, place those in a bowl together and season it with salt and black pepper. Mixthat together well, then slice the onion into rings. Remove the burger from the oven, serve on a bed of lettuce with mustard or sauce of choice, the onion rings and Burger Salsa.
SNACK - Sugar Spiced Popcorn

1 large handful popcorn kernels
1/4 ground ginger
1/2 tsp cinnamon
Grating of nutmeg

Melt the coconut oil in a pan, then add in the popcorn kernels. Give it a good shuffle then place the lid on and allow them to pop, keeping the pan moving. In a mixing bowl, add the cinnamon, ginger, nutmeg, coconut sugar and maple syrup, mix that all together well then tip in the popcorn and coat it in the sugar spice mix.

DINNER - Vegetable Fried Rice (Serves 2):
1 1/2 cups rinsed brown rice
1 white onion
3 cloves garlic
1 tsp ginger paste (or fresh, grated ginger)
2 tbsp Five Spice Paste (or 1 tbsp five spice powder)
1/2 cup peas
1 peeled carrot
1 red pepper
1/2 headhead broccoli
1/2 cup peas
Tamari
1 tsp chilli flakes
Salt & black pepper
Handful crushed peanuts/cashews
3 spring onions
First cook the brown rice if not using leftovers, drain it and put it to one side. Next slice up the onion, then added 1 tablespoon olive oil to a pan and add them in. Fry the onions off until soft and then mince in the garlic and give that a good stir before then adding in the ginger paste and five spice paste or powder. Give that another good mix and then chop the carrots, green peppers and red pepper, add all of those into the pan next and cook them down. Then chop up the broccoli into florets and add those in, mix it well and then add in the peas. Finally, add the cooked rice back in and stir everything together before then adding in a good splash tamari, the chilli flakes and season it with salt and black pepper. Serve with some crushed peanuts and spring onions.
DESSERT - Chocolate & Goji Bark Bites:

Heat the coconut oil in a dish over a small pan of boiling water. Add in the vegan chocolate and melt that down. Lay some baking paper out on a large plate and take 1 tablespoon of the melted chocolate at a time, place that on the paper to create little discs, it should make 10 altogether. Sprinkle the goji berries on top of each one, then place in the freezer for them to set for around 20 minutes.
