BREAKFAST - Banana & Oat Waffles (Makes 4):
1 banana
1/2 cup oat flour
1/2 cup almond milk: http://amzn.to/2eNNrEw

Preheat the oven to 180 dc. Break up one banana into a bowl then mash it up until smooth with a fork. Add in the oat flour, almond milk and vanilla extract, and give it a good mix. Pour it into a silicone waffle mood and smooth over evenly. Place it on a lined baking shelf in the oven for 20 minutes. After 20 minutes, removed it, flip the mould over to press out the waffles and then place them back in for another 10 minutes to finish off. Top them with some fresh berries, banana, maple syrup or nuts.
SNACK - Harissa Hummus:
1 cup chickpeas
1/3 cup water

Salt & black pepper
Sun-dried tomatoes
Basil leaves
Olives
Add all of the ingredients together into a food processor and blend everything up until smooth. Place some sun-dried tomatoes on a plate with some fresh basil leaves on top, then scoop on the hummus and finish them with some sliced olives.
LUNCH - Thai Nachos:

1 avocado
2 tbsp lemon juice
2 cloves garlic
1 spring onion
Red kidney beans (optional)
Small handful fresh coriander
Chilli flakes
Slice up the spring onion then make the ‘Garlic Avo-naise’ by scooping the avocado out into a food processor, add in the lemon juice and minced the garlic, blend until smooth. Place the chips on a plate, top with the ‘Garlic Avonaise’, add on some red chilli flakes, the chopped spring onion, kidney beans and fresh coriander.

SNACK - Curried Almonds:
1 handful almonds (or cashews)
1 teaspoon curry powder
1/2 tsp garlic powder
Add the almonds to a pan with a drop of olive oil. Once they begin to toast, then add in the curry powder and garlic powder. Keep the pan shuffling to keep them toasting and to cover all of the nuts in the spices.

DINNER - Cajun Vegan Bean Burgers with Paprika Skin-on Wedges (Makes 4):
1/2 cup oat flour
1 400g tin mixed beans
1/2 cup sweetcorn
2 tbsp tomato paste
1 tbsp cajun spice mix
1 tsp paprika
1 tsp garlic powder
Salt & black pepper
Iceberg lettuce leaves

Slices of tomato, red onion, pickles etc.
For the Paprika Skin-on Wedges:
5 small potatoes
1 tsp olive oil
1 tsp smoked paprika
Salt & black pepper
First make the wedges by slicing up the potatoes. Place those on a lined baking tray, drizzle over 1 teaspoon olive oil, add on the smoked paprika and season them with salt and black pepper. Mix together well and then place those in the oven on 180 degrees celsius for 25-30 minutes. Make the burgers by blending the oat flour, mixed beans, sweetcorn, tomato paste, onion flakes, cajun spice mix, paprika, garlic powder, salt and black pepper and pulse in the food processor to mix it together. Divide the mix up into four and make even sized burger shapes out of them, then place those in the oven for 20-25 minutes. Served them up into iceberg lettuce leaves and top with some homemade ketchup, slices of tomato, red onion and pickles.

Heat up the almond milk in a pan on a low heat and stir until it warms up. Add in the cacao powder, hazelnut butter, maple syrup and continue to stir well then serve.
