✤ RECIPE: Black Olive & Lentil Pasta (4 portions) ✤
- 1 large garlic glove
- 80g pitted black olives
- 1/2 small bunch of basil
- Olive oil
- 1 x 400g tin of tomatoes
- 1 tsp chilli flackes (optional)
- 150g dried pasta of choice
- 1/2 tsp caster sugar (to taste)
- 1 x 250g packet of ready-to-eat puy lentils

1. Peel the garlic and add to a food processor with the olives and basil stalks. Blitz until finely chopped, then tip into a large frying pan with a drizzle of oil and gently fry until the garlic is fragrant and basil stalks softened, about 2 minutes. Season and add the tomatoes.

2. Half-fill the empty tin with water and add; chop most of the basil leaves and stir in with the chilli (if using). Bring to simmer over a medium heat, stirring occasionally until thickened.

3. Meanwhile, cook the pasta according to the packet instructions, until al dente. Taste the sauce and if it's too acidic, add the sugar. Stir in the lentils. Drain the pasta and add to the sauce.
