SCRAMBED EGGS RECIPE
1 spring onion sliced
1/4 onion diced
1 tomato chopped
Pan fry in 1 tsp olive oil lightly, remove and put to side

2 eggs
1/2 tsp mixed herbs
1/4 cup soy milk
Wisk together 2 whole eggs in a bowl, add a pinch of mixed herbs and 1/4 cup soy milk or milk of choice and wisk together.

Add one 1 tsp of butter into frying pan, once hot, add 1/2 of egg mixture to pan, let sit for 10 seconds then peel from pan with non stick spatula, reduce burner heat to low and quickly add the remaining egg mixture. Let for 5 seconds then peel away from pan with spatula until eggs looked fluffy and whipped.

Place onto a plat with mixed veggies on the side and enjoy.
