FRITTER RECIPE (MAKES 5-6):
2 courgettes, grated
2 carrots, grated
1 onion, grated
1/2 mug chickpea flour
Juice of 1/2 lemon
1 tsp chilli flakes
1 small handful coriander (I used parsley)
Salt & pepper
- Mix ingredients in food processor and drain excess liquid until the mixture can stick together. Form into small fritters and fry in a pan with olive oil on medium heat until both sides are brown.
