BREAKFAST - Superfood Toast with Almond Butter and Caramelised Bananas:

Cut the banana in half lengthwise, then the halves in half. Spread some agave nectar on each slice and then fry them in in a pan on a low heat for a few minutes each side, moving them so that they don’t stick - they go slightly caramelised and once you flip them over they’ll cook in what’s in the bottom of the pan. Spread the almond butter on the toasted superfood bread then place the fried banana on top.
SNACK - Blackberry Acai Smoothie:

Blend up all of the ingredients until smooth, serve chilled!
LUNCH - Simple Vegan Miso Soup:
4 cups hot water (1 litre)

6 mushrooms
2 spring onions
1 thumb-sized piece ginger
2 cloves garlic
Fresh coriander

Slice up the mushrooms, add them to a little hot water in a pan and leave to cook. Then add in the ginger, mince in cloves garlic and a small handful of chopped spring onion. In another bowl I mix 2 the miso paste with a little hot water until smooth and then add that to the pan along with 4 cups hot water. Cook that for around 5 minutes and then serve with fresh coriander, some more spring onions and a splash of tamari. This is just a really basic miso soup, you could add in noodles, seaweed or tofu to bulk it out.
SNACK - Melt in the Middle Cookies (Makes 6)
2 cups oats
1/2 cup oat flour

Preheat the oven to 180 degrees celsius, then In a large bowl mixed all of the ingredients together along with 2 tbsp water. Divide the mix into six, roll them into balls, press your thumb into the centre to make a dip, then to the centre add the chocolate button. Fold the edges and make sure the chocolate is completely covered, and press it flat into a cookie shape. Lay the cookies out onto a lined baking tray with enough space in-between each one and place it in the oven to bake for 20 minutes. Remove and leave to cool for 5 minutes before tucking in. They'll last 4-5 days in a container (if you can leave them that long!)
DINNER - Three Bean Chili, with Brown Rice and Guac:
1 white onion, diced
200g mushrooms, finely chopped
3 cloves garlic, minced
1 tbsp tomato puree
1 tin chopped tomatoes
1 tsp chilli powder
1 tsp oregano
1 can mixed beans
1 1/2 cups vegetable stock
1/2 can sweetcorn (optional)
Brown rice

Added the onions to to a large pan with a little of olive oil and brown them off. Add in the mushrooms and minced cloves garlic and allow to cook for 5 minutes before adding in the tomato puree, tinned tomatoes (I used my marinara sauce) and leave it to simmer. Next add in the chilli powder and oregano, stir well. Add in the tinned mixed beans and pour in the veg stock. Season it with salt and black pepper then leave it to cook, covered for 25-30 minutes. Serve with brown rice and guacamole.
DESSERT - Ice-cream Cookie Sandwiches:
1 frozen banana, chopped

Melt in the middle cookies (recipe above)
Made the nice-cream by blending up 1 frozen banana until almost smooth, then add in the vanilla extract and blend again for 15 seconds. Place one scoop between two of the cookies to make a sandwich.
