ingredients for black bean burgers:
* 1 - 1 1/2 cups cooked black beans
* 2 large sweet potatoes
* 1 - 1 1/2 cups cooked brown rice
* 1/4 cup diced onions (for flavoring black beans)
* 1/2 cup pecans or pecan meal
* 1/2 cup diced green onions
* 2 teaspoons ground chili chipotle
* 2 teaspoons ground cumin
* 1 teaspoon paprika
* 1 teaspoon salt and pepper (add according to taste)
* 1/2 cup corn (optional)
* 1 teaspoon creole seasoning (optional)
toppings: avocado, romaine lettuce, sliced onion and “secret sauce” (for my secret sauce i took 1/2 my fav ketchup + 1/2 my fav bbq sauce and mixed in 1 teaspoon of brown sugar with 1 teaspoon ground chili chipotle powder)
1. soak black beans overnight before using recipe. (make black beans from scratch instead of canned black beans.)
2. cut the sweet potatoes in half and add an olive oil rub to sweet potatoes and place onto foil lined sheet.
3. preheat oven to 400 degrees and cook sweet potatoes for 30-40 minutes or until soft.
4. cook brown rice.
5. boil the black beans in water with diced onion until soft.
6. chop green onions and pecans (or beat with a hammer.. lol) (or use pecan meal) add pecans to the green onions and mix spices together.
7. mash black beans to a smooth consistency. add the black beans to the green onion, pecan and spice mixture.
8. next take your cooked sweet potatoes and mash. take sweet potatoes and add into the mixture.
9. take your cooked brown rice and add into the mixture as well.
10. season a little more to taste. if the mixture is too wet add more dry ingredients.
11. next roll into patties and bake for 30-40 minutes, depending on desired outcome. (if you want a more firm burger leave in the oven for 40 minutes or until golden brown. - be aware that the longer you bake them the drier they may get.)
12. once the burgers are out of the oven add secret sauce and toppings. i love toasting my buns for more crunch. enjoy!
