2 ½ tablespoons olive oil
2 tablespoons red wine vinegar
2 bay leaves
1 ½ cups of black beans (or 1 15 ounce can)
1 ½ cups chopped green pepper
1 cup vegetable broth
1 cup long-grain brown rice (or whatever you prefer)
1 tablespoon chopped garlic
1 cup chopped onions
½ teaspoon freshly ground black pepper
½ cup chopped green onions
¼ teaspoon ground cumin
¼ teaspoon adobo
