The eggs used in this video are from local farms in Oregon where the chickens were pastured raised, I also purchased my eggs at our local food co-op grocery store.
BRUNCH {"Sausage" Lentil Egg Sandwich}
◍ 1 egg
◍ 2 slices of bread
◍ half cup of onions
◍ Herbs: fresh rosemary & fennel
◍ tablespoon of nutritional yeast
◍ salt & pepper (to taste)
◍ tablespoon of maple syrup
◍ tablespoon of lime
◍ ketchup
SNACK {Berry Smoothie}
◍ 1 & 1/4 cup of frozen blueberries
◍ 1 cup of frozen strawberries
◍ half of a banana
◍ 1 & 1/2 cup of soy milk
DINNER {Chunky Veggie Stew}
◍ about half gallon of water
◍ 2 medium potatoes
◍ 1 large Japanese sweet potato
◍ half of a large zucchini
◍ half cup of chopped onion
◍ 1/8 cup of salt
◍ pepper (to taste)
◍ tablespoon of maple syrup
◍ tablespoon of brown sugar
◍ tablespoon of soy sauce
◍ herbs: rosemary + fennel seeds + dill seeds + cilantro
◍ 2 cups of elbow noodles
◍ 1 cup of cooked lentils
◍ 1/2 cup of cooked brown rice
