It's Rymingtahn here! Let's make some healthy BOMB tacos! This simple, healthy and flavorful taco recipe is vegan friendly, low in fat and oh so good. It would be perfect for Meatless Monday, Taco Tuesday or whenever you want it. Come along with me on this mini miniature vlog lol.
Ingredients:
1 c Cooked Quinoa
1 can Pinto Beans
1 packet of Taco Seasoning
1/2 c Veg broth
Pico de Gallo
Cilantro
Guacamole
Sour "Cream"
Lime
Romaine Lettuce

I think adding some fun to my weekly menu, like a Taco Tuesday or Meatless Monday makes life a little more exciting lol.
Instructions:
- Rinse beans thoroughly and add to pan, along with seasoning, pico de gallo, cilantro and broth
- Cook for about 7 minutes on medium heat covered
- While that's cooking, prepare your guacamole (half avocado, some green onions, cilantro, dash of garlic powder and pepper) and prepare your sour "cream" (1 box of extra firm tofu, 1 TBS lemon juice, 1 TBS red wine vinegar, 1/2 chili powder, dash of cayenne- blend everything and chill)
- After 7 mins, mash some of the bean mixture and add cooked quinoa, then mix well.
- Wash lettuce leaves and fill with bean mixture!
