BREAKFAST - Acai Bowl:
1 frozen banana
8 frozen strawberries
1 tsp acai: http://bit.ly/1RZ6NEM
Toppings: fruit, nuts etc.
Blend the frozen fruits with 1/3 mug water. Add in acai, check packaging for suggested amount and blend until smooth. Decorate with toppings of choice.
SNACK - Strawberry Jam Crumble Slices (Makes 12)
2 mugs oat flour
1 mug oats

2 tsp cinnamon:
2 mugs strawberries

1/2 mug almonds, blitzed: http://amzn.to/25aNrU9
Mix all ingredients together in a bowl. Grease a cheesecake tin with coconut oil, add in the mix but reserve around 1/2 mug for the topping. Press down evenly and place in the oven on 180 degrees celcius for 20 mins whilst you make the jam; Add strawberries to a medium saucepan on a low heat, then add coconut sugar with 2 tbsp hot water and stir well. After 5 mins, mash until smooth and then add in the chia seeds and let it simmer for around 15 mins. It thickens as the chia soaks up the liquid. You can also leave this to cool, store it in a jar in the fridge and use it as jam for toast, scones etc. Remove base from the oven and pour over the jam, smooth and crumble on the remaining oaty topping and almonds. Rough the topping with a teaspoon so some of the strawberry comes through and then place it back in the oven for around 30 minutes still on 180 degrees. Remove, leave to cool and then slice it up into 12 squares. Served chilled is best, store in an airtight container for up to 5 days in the fridge.
LUNCH - Falafel Ceaser Wraps
3 iceberg lettuce leaves

1 clove garlic, minced
1 tsp dijon

Cut off the thick stem part of the lettuce and arrange falafel quarters in each leaf. For the Caesar dressing, blend the soaked cashews, garlic clove, dijon, nutritional yeast, lemon, salt and pepper in a food processor until smooth, adding in 1/2 mug water to make it creamy. Drizzle over falafels, sprinkle over more nutritional yeast, this replaces the 'parmesan' and also some blitzed almonds as 'croutons'.
SNACK - Asian Cucumber Sandwich Snacks
1/2 cucumber, cut into 1cm thick rings
1 spring onion, chopped
1/2 avocado, cubed
Handful fresh mint leaves, chopped

Mix together the spring onion, avocado, mint leaves, sesame seeds, wasabi paste and tamari together in a bowl. Take one cucumber ring, place some of the sandwich mix on top and finish with another cucumber ring.
DINNER - Spicy Lentil Cakes & Raw Slaw Salad
Lentil cakes: (Makes 4):
1 cup red lentils, rinsed
1 medium white onion, diced
1 red pepper, diced
2 tbsp chickpea flour/brown rice: http://amzn.to/25MsvmN
4 tbsps nutritional yeast: http://amzn.to/20EtVKC
1 tsp oregano
1 tsp chili flakes
1 tsp spicy paprika
1 tsp garlic powder
Salt & black pepper
Cook the lentils in a pan with boiling water, enough to cover, for around 15 mins until soft. Drain and mash. Add remaining lentil cake ingredients and mix well. In a large pan, heat up a drizzle of olive oil and shape 4 cakes from the mix. Place the cakes in the pan and cook for around 8 mins each side.
Coleslaw (Serves 2):
2 carrots, peeled, grated
1/2 red onion, sliced
1/2 green cabbage, shredded
Caesar dressing, see above
1/2 avocado
Mix carrot, onion and cabbage together well and add in the Caesar dressing, season a little more and add a splash more lemon juice. To make it extra creamy, add in the avocado and mix well.Make a bed of coleslaw and lay the lentil cakes on top, sprinkle over a little more paprika. Serve with corn on the cob or chips.
DESSERT - Strawberry Crumble Sundae
2 Strawberry Jam Crumble Slices, see above

Blend fruit in a food processor with a little water to form an ice-cream consistency. Layer in a jar with crumbled Strawberry Jam Slices. Top with cacao nibs and fresh strawberries, enjoy!
