BREAKFAST: Overnight Chia/Oat Pot (Serves 1)
1/3 jar oats

1 banana, sliced

Shredded coconut
- Cover the oats in the jar with coconut milk and set in the fridge for 30 mins. Slice up the banana and layer on top before adding the chia seeds and filling all the way to the top with coconut milk. Return to the fridge and leave overnight. In the morning, top with goji berries and coconut.
SNACK: Mango, Pineapple & Banana Smoothie (Serves 1)
1 banana, sliced
1 mango, sliced
1/3 pineapple, cubed

- Blend all of the ingredients in a blender and serve cold!
LUNCH: Cucumber Rolls (Makes 15)
1 cucumber, peeled into strips
1/3 mug brown rice, cooked
1/2 carrot, sliced into small sticks
1/4 avocado, cubed

- Roll the cucumber strips, place in a dish and fill with brown rice. Stuff the carrots and avocado into the centre of each roll and sprinkle over sesame seeds. Serve with wasabi and tamari for dipping.
SNACK: Ranch Bean Dip and Crudités
1 tin cannelloni beans, rinsed and drained
1 tbsp apple cider vinegar
1 tbsp lemon juice
2 cloves garlic
1/2 tsp mustard powder
1 tsp ground coriander
1 tbsp onion flakes
Salt
Black pepper
Paprika
1 tsp fresh parsley, chopped
1 tsp fresh dill, chopped
1 tsp chives, chopped
- Blend all of the ingredients except for the fresh herbs. Transfer to a bowl and then stir in the fresh parsley, dill and chives. Add water to change texture as desired. Serve with crudités.
DINNER: 3 Bean Burger (Makes 6)
1/2 mug oats, blended
1 tbsp onion flakes

1 tsp paprika
1 tsp cumin
1 tsp oregano
Salt
Pepper
2 cloves garlic, crushed
2 tbsp tomato puree
1/2 mug/small tin sweetcorn
1 tin mixed beans (I used kidney, black and cannelloni beans)
1 handful fresh parsley, chopped
1 tbsp olive oil

Toppings of choice
- Add the dry ingredients to the oat flour and blend. Add in the wet ingredients and blend until the mixture sticks. Form 6 patties, place on a lined baking tray and cook on 180 degrees celsius for 20-25 minutes. Serve in lettuce leaf wraps with sauce or spread, and toppings of choice.
DESSERT: Chocolate Sundae (Serves 1)

- Blend up the frozen bananas with a little water until creamy. Add in the cacao powder and blend again. Serve in a glass with toppings, layer and top again with Nakd nibbles on last.
