Hey everyone. So I just wanted to give you a simple over view of an easy at home meal that is not only vegan, but Mexican as well. This wonderful meal should satisfy your taste buds, as well as nourish you. Not only is a great budget meal, it takes at least 30 minutes or slightly more, only due to meal prep. This dish should come easy to anyone, as well as inspire you to create and build upon depending on your taste or budget. Salut!
Guacamole:
2 avocadoes (5 for family size portion)
salt
pepper
garlic powder
serrano chile
lime juice
San Marco jalapeno juice
Gardein Chik'n:
Bag of Gardein Chik'n Strips stove top
Tapatio
Refried Beans:
Black refried beans
Add a bit of water to coagulate
Rice:
Any rice will do. Due to lack of tools, and a pressure or rice cooker, I chose Uncle Ben's Red Beans and rice to a add a necessary cajun flair to my Mexican meal. Plain Jasmine/Basmati or Spanish Style rice from Uncle Ben's would be great options as well
Mission Corn Tortillas:
I'm all about Mission Corn Tortillas. They heat up on a flat grill or microwave very well. If steaming in a microwave be sure to wrap the tortillas in paper towel so they don't dry and harden. Serve wrapped. Stove top is better so the tortilla can bubble a bit on the last couple and leave a nice subtle texture.
