So on Tumblr I saw a tutorial on gradient nails and I want to try it out but the manicurist applied something around the nails to keep polish from sticking to the skin so she could peel it off later. Any ideas on what that was?

Just apply Vaseline around your nails with a brush without letting it fine on in your actual nails or the polish won't adhere to your nails properly... and even if you get some in your skin, just take some nail polish remover (preferably non acetone) in a brush and clean around the edges.

Just put Elmers glue around your nail and let it dry, then peel it off when you are done. At least that's what I've heard.

Elmer's glue is essentially a cheaper dupe for liquid paliside. It's slower to dry but WAY less money.

Elmers glue is a good one, I've done that because I do my nails gradient with a sponge all the time. Or, I just get messy and clean it up with a q tip afterwards.
