Also my mum highlights my hair, she always has, and now my hair is like straw, and my roots keep on coming back.
How can I stop my hair being greasy?
How can I cover up my roots without using hats?

Well as far as the roots the only thing I can think of is dying them...
My hair gets great after a day too. I wash my hair everyday and I'm going to try to stop,.. As far as I've been told is dries it out, so your going to produce more oil.. A dry hair shampoo would be great for you the day after a shower! I would stay away from moisture shampoos.

Is there any hair styles that cover it?

I would recommend a sulfate free shampoo, Schwarzkopf makes an inexpensive one especially for coloured hair, it works really well in preserving colour as well as overall hair quality. Also, sulfates in ordinary shampoos make hair greasy cuz they build up, a sulfate free shampoo is great for that reason as well.
