Sulfates in shampoos are cleaning chemicals that are VERY harsh (some say wayyy too harsh for hair). This can cause hair to be dry over time by stripping hair of natural oil

Just to add on to what the other beauties have said, sulfates are what makes the bubbles in your shampoo. Not all sulfates are bad though. The two real bad guys to look out for are Sodium Laurel and Sodium Laureth Sulfate. A sulfate free shampoo will still bubble up because it simply is more concentrated with the good soaps rather than harsh stripping ingredients which will make your hair appear dull, dry and lifeless. Some good brands are Pureology, Aveda and Enjoy (my personal fave).
