Is it best to flat iron my hair on a higher heat setting or to go over each section multiple times on a lower setting.

One time on a higher setting. You should really do two passes on each strip. One super quick pass to warm your hair, then the actual pass to straighten.

i use a pro ceramic hair straightener it helps and i use spray cause it can possibly damage your hair

Always use a heat protector when using heat on hair. A great one is Redken Smooth Lock Heat Glide. If you're using the correct flat iron for your hair type you should only have to hit it once with the flat iron. Use a flat iron that has ceramic plates. Please see guide:
