What kind of bun are you doing? Maybe trying to make it tighter or using lots of hairspray.

If you want a messy bun, try flipping your head over, pulling it up as if for a pony tail but only pull the hair through half way, then twist the band, grab the hair and secure it and add another band. Then use bobby pins all the way around to keep it up. It works for me and I have very frizzy and wave hair. If that doesn't work try putting it up when it's wet/damp.

When I put my hair in a bun I fling my hair ford, then grab the hair, get my hairband, then when I put it in I do something like a half way pony tail, then I grap the hairband with my other hand and do it again.

You can also YouTube quick messy buns, there a lots of great tutorials for hard to hold hair.
